Baker shares simple but delicious M&M and peanut butter cookie bar recipe
Nobody could have predicted that 2020 would be the year we’d all become pro bakers – but here we are.
During lockdown, due to the coronavirus pandemic, the extra time at home has meant lots of people have turned to baking to fight the boredom.
Self-taught Instagram baker Eloise Head excited fans with a new recipe for M&M and peanut butter cookie bars and they look amazing.
As the founder of FitWaffle Kitchen, Eloise’s recipes are adored by her 242k Instagram followers and 9.84k YouTube subscribers.
To recreate her cookie bars, you will need five simple ingredients: flour, eggs, brown sugar, peanut butter and a bag of M&Ms.
In a helpful video, Eloise takes viewers through the three simple steps to recreate the tasty treats in their own kitchens.
First, in a bowl mix together 180g of peanut butter and two large eggs until they’re smooth.
Next, add 120g of light brown sugar to the mixture. Now with your hands, mix in 220g of self-raising flour to make the dough, adding 300g of M&Ms when combined (but save a handful for the top).
Squash the mixture into a baking tin making sure it’s pressed all the way to the edge. Lightly push the leftover M&Ms into the top of the mixture, then cook for 25 minutes in a 160C fan oven.
Eloise even gives an alternative for those with peanut allergies, suggesting you substitute the same amount of Biscoff spread for peanut butter.

- 80g smooth peanut butter
- 2 large eggs
- 120g light brown sugar
- 220g self-raising flour
- 300g M&M’s
