This banana bread recipe offers a healthy alternative to most recipes. It has little to no sugar in it, proving to be a lot better for you than most.

• 3 medium overripe bananas
• 2 eggs
• 80g butter, melted and cooled
• 1 tsp vanilla extract
• 100g almond flour (ground almonds)
• 80g porridge oats or gluten free oats
• Pinch of salt
• 1 tsp baking powder
• 60g pecans, chopped
• 1 banana, sliced lengthways (optional topping)

• Preheat the oven to 180°C.
• Add the bananas to a bowl and mash with a fork.
• Add the eggs, cooled melted butter, and vanilla and stir well.
• Add the almond flour, oats, pinch of salt, baking powder, stir well.
• Add the pecans and stir lightly.
• Place the banana on top (if using), inside facing up.
• Bake for 40mins or until golden on top.

Second nature recommends enjoying this bake with a tablespoon of nut butter, yoghurt or even adding some berries to the top to make it extra delicious.

These gluten free pancakes are low in calories and get their sweet flavour and taste from the bananas.


• 1 large banana
• 2 medium eggs, beaten
• Pinch of baking powder (gluten-free if coeliac)
• Splash of vanilla extract
• 1 tsp oil


• First mash the banana into a bowl
• Add the egg, baking powder and vanilla extract
• Heat a large frying pan and add a little oil
• Spoon a small amount of batter into the frying pan and cook for 1-2 minutes on each side

These pancakes will help you keep fuller for longer which may help you stay away from those mid-morning snacks. 

You can top the pancakes with fruit or nuts for an extra healthy treat.
