‘Fluffy’ baked oats ‘taste like cake’ and are ready in just two minutes – recipe
Overnight oats are easy to make ahead of a busy morning but for those craving an instant fix of the filling grain, baking them is much quicker.
Sharing her two-minute recipe on the food blog Healthful Blondie, recipe developer Tati claimed that it’s the ideal alternative to “boring” stove-top porridge.
Using just a handful of ingredients and a microwave, the flavoursome dish can be whipped up at any time of day.
Praising her “fluffy” baked oats, Tati said: “They are healthy, naturally sweet, moist, and taste like a cake. Add banana slices, chocolate chips, sprinkles, or blueberries for a fun, high-protein breakfast, snack, or dessert!”
What’s more, the recipe contains no added sugar, oil, or butter – making it much healthier than actual cake.
For one serving in a small ramekin:
- Half a cup of rolled oats, gluten-free if needed
- One large egg
- Hald a large over-ripe banana
- One tablespoon of nut butter, (peanut butter, almond butter, sun butter, or cashew butter)
- Three tablespoons of milk
- Half a teaspoon of vanilla extract
- Half a teaspoon of baking powder
- Three-quarters of a teaspoon of ground cinnamon or pumpkin spice

For the best results, use a hand whisk or blender to combine all of the ingredients at once – but do not add in any “mix ins” like fruit or chocolate chips at this point.
Blend on a high speed for 20 to 40 seconds until fully combined, then stir in any additional ingredients.
Tati recommended chocolate chips, blueberries or sprinkles, but anything will work including dried fruit.
Once combined, pour the batter into a greased microwave-safe ramekin or a large mug.

Top with the extra chocolate chips or other ingredients and microwave on a high setting for one and a half or two minutes.
Tati explained: “The baked oats will puff up a lot and almost look like they are over-rising (that is normal); they will sink back to normal when they are done cooking.
“Every microwave is different, so I always check mine at the 90-second mark. If they look underdone or a little liquidy, cook in 10-second intervals until done.
“The oats should be moist and fluffy. Serve with a drizzle of peanut butter, a dollop of yoghurt, and/or fresh fruit.”
