Simple recipe for Lotus Biscoff sponge wows as it uses just three ingredients

A three-ingredient recipe for delicious Lotus Biscoff sponge cake has been labelled the easiest dessert trend yet.

Biscoff spread is one of the nation's food favourites, with many people on the hunt for different recipes that they can use that incorporate it.

And one for Biscoff sponge by social media sensation Eloise Head has certainly wowed people.

London baker Eloise became "Instagram famous" during the first Covid lockdown as she shared her yummy creations on her food account, FitWaffle Kitchen.

Her latest has grabbed attention, as you only need two large eggs, a pinch of baking powder and a jar of Biscoff spread to make it.

Eloise shared a how to make the sweet treat online, alongside pictures and a video.

She begins by melting 400g of Biscoff in the microwave, then mixes it with one and a half teaspoons of baking powder until combined.

The foodie then cracks two eggs on top and whisks until the mixture has thickened.

This batter is poured into a seven-inch cake tin and is smoothed out evenly so it reaches the edge.

The cake should be baked at 160 degrees Celsius for around 30 minutes.

Eloise said bakers will know it's done when a toothpick you stick in to the centre comes out clean.

After it's cooled, the brunette then scoops 125g of Biscoff on top of the cake, allowing it to drip down the edges.

She also suggests crumbling Biscoff biscuits over the top for decoration, but this is optional.

Lotus Biscoff Cake Recipe

Ingredients

  • 400g Biscoff spread, melted + 125g for the topping
  • 1½ tsp baking powder
  • 2 large eggs

Method

  1. Melt Biscoff in the microwave then mix with baking powder
  2. Crack in the eggs and whisk until combined
  3. Pour the mixture into a seven-inch cake tin and bake for 30 minutes at 160 degrees Celsius
  4. Scoop more Biscoff on top, allowing it to drip down the sides

Photos and videos of the recipe, have amassed more than 20,000 likes since they were uploaded online, with many excited comments.

One exclaimed: "Delicious! I will be making that."

While a second food fan wrote: 'This looks ridiculously good.'

A third tagged her friend and asked: 'Shall I go get Biscoff now?'

We certainly feel a trip to the shop coming on.

The recipe comes as it was recently announced Iceland is launching new Lotus Biscoff Ice Cream Cake with chocolate layers for just £3.
